WF’s Fajitas with French Kitchen Fajita Rice

Friday night was another late night at work for WF.  We worked out dinner together, using the leftover Bloody Mary Flank Steak to make our version of fajitas and rice. 

We had some left over green pepper and onion and WF picked up a red pepper on his way home from work. 

WF sauteed the veggies while I snapped a picture of WF’s impressive pan toss.  We are both quite talented.

   WF sliced up the flank steak and added it to the pan.  That’s pretty much all there is to it.  A quick and easy dinner using the leftovers.  We also spice up regular white rice to go with it.  You can see the “recipe” below.

WF’s Fajitas

Ingredients

  • 1/2 lb flank steak (or chicken or ground beef, or whatever meat you want)
  • red pepper
  • green pepper
  • 1/2 large white or yellow onion
  • shredded cheese
  • sour cream
  • other toppings
  • tortillas

Cook

  • Slice or dice the peppers and onion. 
  • Slice the flank steak (or other meat).  
  • Saute the flank steak (or other meat) first and drain off excess liquid. 
  • Remove from pan OR in a separate pan saute vegetables. 
  • Add flank steak to veggies at the last minute to warm. 
  • Warm tortillas and build to suit.

French Kitchen Fajita Rice

Ingredients

  • White rice
  • 1 pkg. fajita seasoning

Cook

  • Using the directions on your rice package, bring water to a boil. 
  • When you add the rice to the water, stir in 1/4 pkg of fajita seasoning. 
  • Cook per directions on rice package.

You can also use taco seasoning and add cooked corn kernels towards the end if you like.
